At Adventures Decanted, it is our greatest passion to make wine approachable and enjoyable.
We strive to provide an elevated experience for our guests centered around amazing wine, food, and hospitality. We are one of the first restaurants to feature 40 sommelier-selected wines by the glass from all around the world. To do this, we utilize our Enomatic wine dispensers that consistently keep our wines at the ideal temperature and draw wine directly from the bottle to the glass through a gas system, preventing oxidation and preserving the quality of the intended wine experience. Our Enomatic dispensers let guests enjoy wines by the glass without having to commit to purchasing an entire bottle, allowing our guests to try our wines with the click of a button in a taste (1 oz), half glass (2 oz), or full glass (4 oz) pour. We also feature a seasonal wines by the glass menu for our guests to choose from in addition to the selection from our wine dispensers.
In addition to our Enomatic dispensers, we have our stunning showpiece wine cellar that can hold over 300+ bottles
of wine that welcomes guests as they arrive. This cellar is temperature and humidity controlled, keeping the
temperature consistent at 55 degrees Fahrenheit. Along with our guest-facing wine cellar, we have a
temperature-controlled wine locker room for our wine club members that holds 100 bottles of wine, and our storage
wine cellar which holds 200 bottles, both kept at 55 degrees Fahrenheit. Altogether, our wine bar can store and
preserve over 600 bottles of wine.
Our guest-centric and vivacious sommelier, Shelby Peterson, works directly with our wine distributors to select a
variety of wines that are world-renowned, sustainable, biodynamic, or exclusively produced. Our wines are unique,
and most cannot be found in your local spirits store. We pride ourselves in the close relationships fostered with
our distributors and the winemakers they represent all around the world. Many of the winemakers we know
personally, giving us the honor to tell our guests their stories from first-hand experiences with them.
Complementing our wine selection is our seasonal, chef-inspired menu created by Executive Chef Liana Claire
Aghajanian. Our menu allows guests to select from a variety of local and imported cheeses and cured meats with our
guest-favorite Adventure Board and also features artisan pizzas, shared plates, seasonal, made-from-scratch
entrees, soups, and house-made breads and desserts. Our menu also features interactive experiences such as our
Parmesan Wheel Pasta Experience and Seafood Boil (during the summer) that our sommelier pairs with the most
delicious wines.
In addition to our wine bar, we offer wine tastings, private and social events, travel adventures, creative blogs,
wine clubs, and wine education. We host events that elevate the wine experience including interactive cooking
classes with wine pairings, unique tasting events (such as our wine + junk food pairing), and wine tastings
featuring winemakers, sommeliers, and master sommeliers.

TONI HALLGREN

After a fulfilling career in healthcare, Toni felt the need for change, one that included mountains, seasons, laughter, and adventure. She decided to add knowledge to her past business experience by obtaining additional Masters certification in Food and Beverage Management, going to culinary school and expanding her culinary skills with training in France and Italy. Because of her love for wine and food pairings, Toni studied and continues to study wines at the International Wine Guild.
Although her career has been important to her, family and community are more so. Toni’s life is full with support from her wonderful husband Scott, her grown children Jessica and Jeff, and her grandsons Connor and Dylan. Community paired with philanthropy is an important part of Toni’s passion. Her hope is to contribute to the growth and success of Grand County.
Now for the fun and beauty of the area… Toni also loves to camp, ski, bike, hike, snowshoe, fly fish, golf, ATV, and play with her two adorable chocolate labs. And, by the way, wine pairs with all of these activities! What a beautiful life and adventure!
SHELBY PETERSON
CO-FOUNDER | OWNER | WINE BUYER | SOMMELIER
Shelby is a highly certified sommelier and food and beverage director with a wealth of experience in selecting, buying, and pairing wines. She has years of experience purchasing wines for clients at a world-renowned resort and also has over twenty years of hospitality experience, including regional and corporate management, in the restaurant industry. Shelby is known for her personalized and exceptional service, inviting and energetic personality, her knowledge, and her sincere and contagious passion for wine. Shelby’s true passion in addition to wine is people. Her love for both people and wine is evident in every event she plans, every client she greets and interacts with, and each experience she creates for her guests.
Shelby’s journey began many years ago when passing the level one course of Master Court of Sommelier, and from there she acquired several other certifications. To name a few of her certifications and accolades which make her one of the best in her field, Shelby also has the following certifications and accolades: Certified Specialist of Wine; Certified California Appellation Wine Specialist; Certified Italian Wine Specialist; Certified French Wine Scholar; BarSmarts Course, Wine Spectator Award of Excellence for world-renowned resort.
In addition to these accolades, Shelby was also selected to assist the master sommeliers for “Somm Talks” at Aspen Food & Wine Festival in 2016. She also completed several full sommelier immersion programs including Napa Valley Steakhouse Summit, Touch the Terrior, Oregon Pinot Camp, and Umqua Valley wine immersion.
In addition to being the Wine Director for the renowned C Lazy U Ranch, Shelby has also been contracted by other local resorts, including Granby Ranch and Devil’s Thumb Ranch Resort and Spa, to host wine tastings for group events and coordinate wine dinners and member events to include prestigious wineries such as Peter Michael Wineries and Staglin Family Vineyards.
Shelby has been featured in the Sommelier Journal three times in the last two years. She has studied in both Italy and France, and started a non-profit in Kenya, Africa that greatly impacted several impoverished communities. The Tana River Project created opportunities to lead and send several groups to this region in Kenya. Because of the success of this mission and her passion for travel, teaching sustainability, experiencing other cultures and traditions was ignited.
Currently, Shelby is studying to became a wine certified wine educator, and a Master-Level Burgundy course. She never misses an opportunity to learn more about wine and enjoy the experiences and adventures it offers.
